I’ll be honest and confess that I have never had success making brownies before. And because of that, I’ve stayed away from trying to make them for a while. But, I had my heart set on making brownies as the base for a banana split, and with my nephew Jacob cheering me on, I went for it. Ok, I still dragged my feet but it was because of Jacob’s insistence that I went for it. And I am so glad that I did.
These little morsels turned out to be some of the most delectable brownies I have ever had. They were moist beyond belief and were perfect for a banana split. Well, um, as a sundae! Since I forgot the bananas. Doh!
Brownie Sundaes (Recipe slightly adapted from AllRecipes)
Ingredients:
1/2 cup butter
1 cup white sugar
2 eggs, lightly beaten
1 tsp vanilla extract
1/3 cup unsweetened cocoa powder
1/2 cup all-purpose flour
1/4 tsp salt
1/4 tsp baking powder
Vanilla Ice Cream
Cool Whip
Pineapple Chunks
Strawberries, sliced
Maraschino Cherries
Chocolate Sauce
Instructions:
Preheat oven to 350 degrees F. Lightly grease and flour an 8 inch square pan.
Using a large saucepan, melt the butter over medium heat. Remove from heat. Mix in sugar, beaten eggs and vanilla extract. Stir together until combined. Add in the cocoa, flour, salt and baking powder and continue stirring until combined.
Pour batter into prepared baking pan and place in the oven. Bake for 25-30 minutes. Let brownies cool to set.
To prepare Sundaes, add ice cream scoops, pineapple chunks, strawberries, and Cool Whip. Drizzle with chocolate sauce and top with a cherry.
