This ridiculous inspiration came from another Lauren Dane Ebook I read a couple of weeks ago. All it took was the author to write “Roasted Strawberries with a Balsamic Reduction” and I knew my life would not be complete without trying it.
Roasted strawberries? Have you ever heard of such a thing? I like strawberries just as they are when fresh but there was something about the tangy sweetness of this mixture together that really was unbelievable. It was a bit tangy for my mom and sister but my dad and I quite enjoyed it.
It went well with a pound cake I purchased but was equally delicious as a topping on a toasted bagel with cream cheese. I’m sure it’d would be a treat by itself as well.
Roasted Strawberries
Ingredients:
1 pint strawberries, hulled and cut in half
1/4 c balsamic vinegar
2 Tbsp pure maple syrup
1 tsp sugar
Pound cake
Instructions:
Preheat the oven to 300 degrees.
In a medium bowl combine balsamic vinegar, maple syrup and sugar. Mix well to combine.
Toss the strawberries in with the sauce and let marinate for a few minutes.
Prepare a rimmed baking sheet by lining it with aluminum foil so the sauce stays in the pan. Place the strawberries and marinade in the baking sheet and roast for 30 minutes.
Serve over pound cake. Enjoy!
