Sometimes I forget just how quick and simple it is to make fresh vegetables. Take these green beans for example.
So here I was having an enjoyable, relaxing Saturday reading a book. All of a sudden the author wrote what they were having for dinner and one thing in particular caught my eye – fresh green beans with butter and lemon. That’s all she wrote. It was enough to make me go get the ingredients to prepare it the next day.
It turned out to be the perfect accompaniment to my slow cooker ham that I was making. And it didn’t require me to turn on the oven. Score!
It also made me realize I need to cook fresh vegetables more often.
Lemon Butter Green Beans
Ingredients:
1 package fresh green beans
1 Tbsp butter
Juice of 1 freshly squeezed lemon
Salt and freshly ground pepper
Instructions:
Make green beans according to your preference. For this dish, I steamed the green beans in the bag they came in for 3 minutes in the microwave.
Once the green beans are cooked, transfer to a serving dish. Add pats of butter and toss to melt. Sprinkle lemon juice over green beans. Season with salt and freshly ground pepper. Toss to combine and serve.
