I’ve decided every week I am going to try a recipe from either the Weight Watchers website or their Message Board. This week’s recipe comes from the Message Board.
I’m going to put this out there – this is the best beef stew like dish I’ve had in quite a while. The meat is so tender and the gravy is tasty.
We served it with mashed potatoes and I’ll be honest and say when I was putting away the left overs, I may have had a bowl of mashed potatoes with nothing but gravy. Who knew Sprite Zero could do that to gravy?
There are a couple of variations out there – one I want to also try uses red wine in place of the Sprite. Heavenly.

Beef Tips in Mushroom Sauce
Ingredients:
2 lbs. Lean Chuck Steak (cut into 2 inch long pieces
1 can Low Fat Cream of Mushroom Soup
1 package Onion Soup mix
Sprite Zero
Baby carrots
Salt and pepper, to taste
Instructions:
Season the beef with salt and pepper. Add the meat to the slow cooker. Add the Cream of Mushroom soup and then the Onion soup mix. Fill the soup can with Sprite Zero and add to the slow cooker. Mix everything together.
Cook on low for 8 hours, adding the carrots after four hours. Serve over mashed potatoes or noodles.
