I read a lot of books. Lately most of that reading has been via ebooks. Whenever I’m reading and a line is exceptionally memorable, or involves food, I usually grab a screen shot of it.
This particular dish came about because it was made by the heroine in an ebook I was reading. So, of course, I captured it and saved the passage. Unfortunately it was just a sample of a chapter so I don’t even know the name of the book this recipe came from to credit the original source. But it made a nice dish for brunch.
Eggs and Prosciutto on English Muffin
Ingredients:
2 eggs
1 tsp cold water
Cold butter
Salt and pepper, to taste
2 English muffins (or sourdough bread)
4 slices prosciutto
Instructions:
In a small bowl, add eggs and water and whisk. Using a microplane grater, grate about 1 Tbsp butter into egg mix and stir.
Heat a small frying pan over medium heat. Add about 1 tsp butter and let melt. Add egg mixture to pan and cook over medium heat, stirring constantly. Season with salt and pepper.
Toast muffins. Once toasted, add smear of butter to muffins. Place slice of prosciutto to each muffin (4 slices total) and top each muffin slice with egg mixture.
