Sunday morning was one of those lazy days and I just wanted comfort food. And lately comfort food to me comes in the form of something pumpkin related.
These pancakes were delicious combined with maple syrup. It had just the right texture and taste of fall. If only I was in Vermont looking out my log cabin onto a color laden tree line. A girl can dream right?
Pumpkin pancakes
Ingredients:
1 c all-purpose flour
1 Tbsp brown sugar
1 tsp white sugar
1 tsp baking powder
1/2 tsp baking soda
1 tsp cinnamon
1/2 tsp nutmeg
1/4 tsp salt
1 tsp vanilla extract
2 Tbsp butter, melted
1/2 c buttermilk
1/4 c pure pumpkin
1 egg
Instructions:
In a mixing bowl, mix together flour, sugars, baking powder, baking soda, salt and spices. In a separate bowl whisk together egg, vanilla, pumpkin and buttermilk.
Add flour mixture with wet ingredients and whisk until smooth.
Heat a large skillet over medium heat, and coat with cooking spray. Pour 1/4 cupfuls of batter onto the skillet, and cook until bubbles appear on the surface. Flip with a spatula, and cook until browned on the other side.
** note, I added an additional 1 Tbsp of milk to the mixture at the end because it was thick.
