My nephew Jacob loves onion rings so when I made some hamburgers for him, I knew I wanted to make some onion rings to go with them. While I was making onion rings, I thought why not also make some fried zucchini to go with them. I love zucchini whether it’s steamed, sautéed, fried or stuffed.
This was simple to make and I kind of just threw everything together to make the breading. It was tasty and definitely a nice treat for a little something different.
Fried Zucchini and Onion Rings
Ingredients:
1 large onion, cut into slices
1 large zucchini
Flour
Corn meal
Paprika, salt and pepper
Buttermilk
Oil, for frying
Instructions:
Take apart onion slices to form into rings. Cut zucchini in half then into 3 inch “French fry” like pieces. Place onions and zucchini in a bowl and cover with buttermilk. Let sit in buttermilk for 15-30 mins.
In a large bowl, add flour and corn mean (a 2:1 ratio) and season with paprika, salt and pepper.
Heat oil in a medium size pot until hot. Dip the onions and zucchini in batches in the flour mix. Shake off excess flour then drop a few at a time in the oil and fry until brown.
Take zucchini and onion rings out of the pot with a slotted spoon and drain on a paper towel covered plate.
