I was home not feeling well today and really wanted some comfort food. There wasn’t much in the pantry but I had all the ingredients to make these yummy pancakes. I love the taste of maple syrup so when I saw this simple recipe I knew I wanted to try it.
Maple Pancakes
(recipe adapted from All Recipes)
Ingredients:
1 c all-purpose flour
1 1/2 tsp baking powder
1/2 tsp salt
1 tsp sugar
1 tsp brown sugar
1 egg
1 c milk
2 Tbsp vegetable oil
1 Tbsp maple syrup
1/2 tsp vanilla extract
Instructions:
In a bowl, combine flour, baking powder, salt, sugar and brown sugar. In another bowl, whisk together egg, milk, oil, syrup and vanilla extract. Stir wet ingredients into dry ingredients until blended. Pour batter by ladle full onto a lightly greased hot griddle. Flip pancake over when bubbles form on top of pancakes. Cook until second side is golden brown.
Note: pancakes will be thin and make between 10-12.
