I love giving gift baskets for Christmas. One year I was part of a Christmas Bazaar my club group held and they sold these Taco Soup Gift Baskets. When I saw this chili mix recipe on the Our Best Bites website I knew I wanted to do a similar gift basket to pass out to a couple of people this year. This recipe is so similar to that Taco Soup Recipe that I knew it would be a hit.
I added a cornbread mix to the baskets too as well as all the cans the recipients would need. We ended up having this for our New Year’s Eve dinner and the family enjoyed it.

Chili and Cornbread Gift Basket

Hearty Chili
(slightly adapted from Our Best Bites)
Ingredients:
1 lb lean ground beef
1/2 onion, diced
1/2 green bell pepper, diced
2 Tbsp chili seasoning mix (recipe below)
2 16oz cans pinto beans, drained and rinsed
2 16 oz cans kidney beans, drained and rinsed
1 28oz can diced tomatoes, undrained
1 14oz can beef broth
Instructions:
In a large pot, add beef and onion and cook over medium-high heat until browned. Drain grease from the meat mixture. Add all remaining ingredients and bring chili to a boil. Reduce heat to a simmer and cook an additional 30-40 minutes.
Chili Seasoning Mix
(slightly adapted from Our Best Bites)
Ingredients:
1/2 c chili powder
1/4 c ground cumin
2 Tbsp garlic salt
2 Tbsp dried oregano leaves
1 Tbsp ground coriander
Instructions:
Mix ingredients together and place in a Ziploc bag. Add a tag or label and recipe instructions.

Texas Cornbread
(recipe from Christmas Organized)
Ingredients:
1 package Texas Cornbread Mix
1 egg
1 cup milk
1/4 cup Crisco shortening
Instructions:
Preheat oven to 425 degrees. Spray an 8 inch square pan with Pam spray. In a mixing bowl, combine all ingredients and mix until smooth.
Bake for 20 to 25 minutes.
Texas Cornbread Mix
Ingredients:
1 c yellow corn meal
1 c sifted flour
1/4 c sugar
1/2 tsp salt
4 tsp baking powder
Instructions:
Place all ingredients in a bowl. Mix until combined thoroughly. Place mixture in a Ziploc bag add tag or label along with recipe.
