Thanksgiving Vanilla Cupcakes

The kids had their Thanksgiving party at school this week and since I was off of work I was able to make some treats for them.

Sydni wanted cupcakes with little acorns and pilgrim’s hats on top. Unfortunately I didn’t have any theme liners or sprinkles so it looks a little Halloweenish/baby showery.

I tried the Amy Sedaris vanilla cupcake recipe and really liked it. It was light and had a nice taste to it.

The acorns were made out of Mini Nilla Wafers, Hershey’s Kisses and some chocolate icing.

The Pilgrim hats were made out of Fudge Stripes Cookies, Mini Reese’s Peanut Butter Cups, chocolate icing and yellow icing.

Both were fun to make and the kids got a kick out of them.


Amy Sedaris Vanilla Cupcakes (Recipe from Epicurious)

Ingredients:

1 1/2 sticks unsalted butter, cut into 1 inch slices
1 1/2 cups sugar
2 eggs
2 teaspoons pure vanilla extract
2 1/2 teaspoons baking powder
1/4 teaspoon salt
2 1/2 cups flour
1 1/4 cups milk

Instructions:

Preheat oven to 375 degrees F.

Place butter in a large mixing bowl and beat on medium to high speed until smooth. Mix in the sugar. Add eggs and mix to combine thoroughly. Add the remaining ingredients and mix until combined. Using an ice cream scoop, pour batter into cupcake pan/liners until 2/3 way full. Bake for 20 minutes. Decorate.

Makes 24 cupcakes.
