I love French toast but it’s not one of those things I make very often. So when I saw in a Rachael Ray magazine a tip for a substitution for milk I knew I’d give it a try. Unfortunately I couldn’t remember if you were supposed to substitute evaporated milk or sweetened condensed milk…..so I’m giving both a try.
First up is the evaporated milk version. This was very good but I didn’t notice a big difference in the taste from using regular milk. Either way it was delicious. Even my mother, who made a face and literally stopped walking when I mentioned it had evaporated milk in it, loved it.
French Toast with Evaporated Milk
1/3 c fat free evaporated milk
1/2 tsp vanilla
1/2 tsp cinnamon
4 slices of bread
Combine eggs, evaporated milk, vanilla and cinnamon together in a small bowl. Whisk ingredients until mixed completely. Dip bread in mixture and cover completely in liquid.
Heat a skillet on medium heat. Add about 1/2 Tbsp butter to skillet and let melt. Place bread in skillet two at a time and let cook until browned. Flip and cook other side. Garnish with confectioners sugar and serve with syrup.
