Devil’s Food Oreo Cupcakes

Do you ever have one of those days where you just HAVE to have a cupcake? Well that day for me was Saturday. I just turned to the family and said “I need a cupcake!” then proceeded to get up and bake them. Earlier in the week I had tried to make some Oreo cupcakes but the instructions in the recipe were so flawed that my batter looked like bread dough. So for these quick ones, I went with a box mix and just changed it up to make it more Weight Watchers points friendly.

I have to say they were quite good. Moist yet light and airy. I did put some Oreos in the bottom of the liner and in the dough but, to be honest, I like them just plain. It may have been that I used Oreos that were mint flavored. Good by themselves but in a cupcake, not so much. Other people have raved about them so I guess you can judge for yourself.


Devil’s Food Oreo Cupcakes

Ingredients:

1 box Devil’s Food cake mix
3 eggs
1/2 cup unsweetened applesauce
1 1/2 cup water
Oreo cookies, mint flavor

Instructions:

Preheat oven to 350 degrees.

Mix together cake mix, eggs, applesauce and water until combined. Using a cookie or ice cream scoop, place batter into lined cupcake tins. Fill about 3/4 of the way.

Options for using Oreos:

1) Take off one top of Oreo cookie by twisting cookie apart. Place cookie and cream cookie side down in tin. Cover with batter.

2) Cut remaining cookies (without the cream) into quarters. Lightly dust with flour then place in batter in tins. (This will cause cupcakes to rise higher)

Bake 19-21 minutes.

Note: my cupcakes were not filled as high and I got 30 cupcakes from the mix at 2 Weight Watchers Points Plus per cookie (without Oreos or frosting)

    They sound good! Too bad I wasn't able to see this before I was looking for a birthday treat to make yesterday and take to work today!
