I’m pretty sure I’ve mentioned that I love anything with maple syrup on it. And when I started incorporating it into baking last year – wow. Now I look for any opportunity to use it when I’m cooking. These pork chops were good and probably would have been even better with the sauce that comes with the original recipe — only I was in a hurry and dumped in powdered sugar instead of flour to the pan. Karma baby – I just shook my head in amazement when she did the exact thing a few months back. Now the sweet potatoes were amazing. I didn’t measure anything but just drizzled and sprinkled as much as I thought it needed.
Ingredients:
4 pork loin chops
1 1/2 tsp apple cider vinegar
1/4 cup maple syrup
1/4 cup water
1 tsp Worcestershire sauce
Salt and pepper, to taste
Instructions:
Preheat the oven to 400°F.
Lightly brown the pork chops in a pan sprayed with Pam cooking spray. Place pork chops in a casserole dish.
Combine remaining ingredients in a small saucepan and heat until warm. Pour sauce over chops. Cover and bake for 45 minutes, basting occasionally.
Maple Glazed Sweet Potatoes
Ingredients:
1 large sweet potato, diced
Olive oil
Maple syrup
Brown sugar
Ground nutmeg
Ground cinnamon
Instructions:
In a small casserole dish, drizzle small amount of olive oil and maple syrup over potatoes. Sprinkle brown sugar, nutmeg and cinnamon over potatoes and toss to combine. Cover and bake in 400°F oven for 40 minutes.
