I love tilapia. Especially since it is easy and quick to make. And if it goes in a foil packet — even better! I made this tilapia with two different seasonings to see which one was better. They were actually both delicious and I will definitely make them again. And the squash and zucchini were great. Not too mushy. I never thought I would ever voluntarily eat either vegetable unless it was deep fried so I am pleased that I have acquired a taste for both.
Foil Packet Tilapia
Ingredients:
3 Tilapia fillets
Squash, sliced in 1 inch rounds
Zucchini, sliced in 1 inch rounds
Olive oil
Lemon pepper or Garlic and Herb spice
Salt and pepper to taste
Foil
Optional:
Breadcrumbs
Parmesan cheese
Instructions:
Preheat oven to 350 degrees F. You will need enough foil to make a packet. Spray the foil with Pam spray then place the fillet on the foil. Drizzle with olive oil. Season with either spice, salt and pepper. (see optional breading) Place the squash and zucchini on top of the fish. Drizzle with olive oil and season with the same spices you used on the fish.
Optional Breading: You can sprinkle breadcrumbs and cheese on the fish before placing the vegetables on top. You can also top the vegetables with some cheese to give it a different flavor.
Fold the foil so the long sides meet and then fold them over the top. Fold the ends up to create a packet. Place on a cookie sheet and bake for 20-25 minutes.
