I love cooking with Reynolds foil packets. It is such a simple technique and you can experiment with different spices and food. The tilapia was so good and tender. You can also cook this on the grill. The Reynolds website also has a lot of foil recipes.
Fish and Potatoes Foil Packet
Ingredients:
Tilapia Fish filets
Lemon, cut in half (use one half for juice and the other for thin slices)
Lemon Pepper
salt and pepper, to taste
Potatoes, thinly sliced
Instructions:
Preheat oven to 350 degrees. You will need foil pieces for however many servings you are making. Spray foil with Pam spray. Place the tilapia on the foil. Sprinkle with salt, pepper, lemon pepper and lemon. Place a couple of lemon slices over fish. Cover fish with the thinly sliced potatoes. Add salt and pepper to potatoes. Fold foil over to make a secure and tight packet. Cook 25 to 30 minutes.
