I wanted an egg sandwich but something that was Weight Watchers friendly so I used my go-to egg mixture. This time I added some Canadian Bacon with it to make it a little healthier. And threw it all on a sandwich thin which is only one point for both pieces of bread. Simple and delicious.
Faux McEgg Sandwich
Ingredients:
1 Tbsp light olive oil
1/2 Green bell pepper, diced
1/2 Red bell pepper, diced
3 whole eggs
1 egg white
1/4 tsp minced garlic
Salt and pepper to taste
2 Tbsp cheddar cheese, shredded
Canadian Bacon slices
Sandwich Thins
Instructions:
Heat olive oil in skillet over medium heat. Add diced bell peppers and minced garlic to pan and sauté for about 5 minutes. Beat eggs together and add salt and pepper to taste. Once cooked, take peppers out of pan and set aside. Pour egg mixture into heated pan and stir until almost done. Add peppers and cheese to egg mixture and heat until combined. Take eggs out and set aside. Heat Canadian bacon in skillet for 3 minutes. Toast sandwich thins and then stack bacon and egg on toast to make a sandwich. The eggs make enough for four servings.
