Last month I went to Las Vegas for a work conference. You know I couldn’t pass up the opportunity to head in a couple of days early to try all the food Las Vegas has to offer. I went on Instagram and looked for the best places on the strip to try. The photos from Egg Slut in the Cosmopolitan Hotel kept catching my attention. I love me a good breakfast sandwich. Everything about their sandwich looked amazing so it was on my list.
Then I saw reviews saying to get the EggSlut. Not really ever having tried a poached egg before, I was a little reluctant to try it. Reluctant but intrigued. So off I went to try it only to find the line so long I turned right back around and out the door.
My second attempt I left plenty of time to wait in line – which only ended up being a 20 minute wait. I ordered both the breakfast sandwich and the EggSlut thinking I would take a bite of the EggSlut and happily eat my sandwich. When I went to pick up my order, the chef implored me to mix the yolk and potatoes together. After the picture taking I settled in to eat my breakfast. After a couple of bites of sandwich I went for the EggSlut and proceeded to eat the whole thing.
Oh em gee that combination was amazing. I’ve had it two weekends since I’ve been back and I can’t wait to make it again. Give it a try. And this recipe is more of a tutorial because people have their own opinions on how they like their mashed potatoes. I normally like mine chunky but for this, it needs to be smooth but not too, too pureed. These 8 oz mason jars are the perfect size to use to make this Copycat Egg Slut because you know everything is better in a mason jar.

Ingredients
- 1/3 c creamy mashed potatoes
- 1 egg
- water
- salt and pepper
- green onions or chives
- Loaf French bread
- olive oil or spray
Instructions
- Preheat oven to 350 degrees.
- Prepare bread by slicing bread into 1/2 inch slices. Drizzle with olive oil or spray with olive oil spray. Place on a cookie sheet and toast in the oven until done to your desired toastiness.
- Fill a medium pot with water and bring to a simmer.
- Place 1/3 c mashed potatoes (amount may vary by whatever size jar you use) into bottom of mason jar. Top with egg. Seal jar.
- Carefully place in simmering water. Water should come to about 1/4 inch to bottom of jar lid. Simmer for 15 minutes (until whites are set).
- Season with salt and pepper and top with green onions or chives.
- When ready to eat, mix egg together with potatoes and slather on toasted bread.
