Recently I had the opportunity to attend an event with Dairy Max at the Dallas Cowboys practice facility, The Star in Frisco. If you know me at all, you know I am a die hard Cowboys fan. Like super fan girl here. So when Dairy Max contacted me to learn more about how to “Eat Like a Cowboy” I jumped at the chance.
I’ve been to training camp to see the Cowboys before but I haven’t had the chance to see their new facility in Frisco.
Woah. This is a nice training complex. But it’s more than a training complex. It’s the official headquarters of the Cowboys, there are offices for partners, it’s the football stadium for Frisco ISD, the merchandise warehouse and much more. And lots of history of the Boys.
For this event we heard from representatives from Dairy Max as well as a nutritionist with the Cowboys. She explained to us how they provide meals every day for the players. They have breakfast, lunch, snacks and sometimes dinner for the players. They are very methodical about what they serve the players because they have to have the right amount of protein and carbohydrates to be able to perform at their peak. A lot of the players have a routine of what they like to eat.
I loved that they also provide a space and food for all the employees too. What a perk! Not only do they provide meals but they are healthy meals with quite a selection. Boy what I wouldn’t give to work with the Cowboys.
You’ll notice there aren’t any photos of the actual practice field or players – unfortunately we weren’t able to take pictures of them but even without the photographic evidence, it was an awesome experience to watch the team practice while we ate lunch. So fun! A chef for the Cowboys also showed us how to make a cauliflower based sauce for many uses and I can’t wait to experiment with it.
One of the items they served us for lunch was Pumpkin Soup. Yummy! I immediately came home and started recreating it so I could share it with you. This is the perfect first course or a soup for a pre-meal for Thanksgiving dinner.
Pumpkin Soup
Yields 4 servings

Ingredients
- 2 Tbsp butter
- 1/4 c white onions, diced
- 1 tsp minced garlic
- 2 c chicken (or vegetable) broth
- 1 – 15 oz can pumpkin puree
- 1 1/2 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 1/4 c heavy whipping cream
- 2 Tbsp pure maple syrup
- Topping:
- Heavy whipping cream
- Chives or parsley (for garnish)
Instructions
- In a saucepan, melt butter over medium heat.
- Add onions and cook for 3 minutes. Add garlic and cook for about one minute.
- Add broth, pumpkin puree, ground cinnamon and nutmeg. Mix together and let simmer for 20 minutes.
- Take soup off heat and add in whipping cream and maple syrup and stir to combine.
- Serve by garnishing with whipping cream and chives or parsley.
