Oh summer patio desserts how I love thee. This Balsamic Strawberry Icebox Parfait is sure to become a favorite of yours this summer.
I always tell myself that summer is my least favorite season but then the warm weather gets here and I want to be out on the patio or by the pool. I don’t know why I kid myself, I love this time of year.
I am working on getting my patio summer ready now by planting flowers and coming up with ways to make my small space pretty. There is always a comfortable place to sit out there, read, sip and eat something sweet. A perfect way to end the day or spend a lazy weekend.
But for the last three summers my place has looked the same. I think it’s time for a makeover. I have so many ideas for sprucing up the place but I think I need a bigger space. Oh decisions decisions.
Anyway, this strawberry icebox dessert is a favorite because you can make it with any berries. Since I love strawberries, I chose to add my favorite marinade to them to add a little kick. Hope you enjoy these little bites of deliciousness.
Balsamic Strawberry Icebox Parfaits
Balsamic Strawberry Icebox Parfaits is the perfect layer dessert for your summer get-togethers. Nilla wafers topped with a cheesecake filling topped with balsamic marinated stawberries.

Ingredients
- 18 Nilla Wafers
- 4 oz cream cheese, softened
- 1/4 c powdered sugar
- 1 tsp vanilla extra
- 1/2 c heavy whipping cream
- 1/2 lb Strawberries, hulled and sliced thinly
- 2 Tbsp Balsamic Vinegar
- 3 Tbsp light brown sugar
Instructions
- In a medium bowl, add strawberries, balsamic vinegar and light brown sugar. Toss to mix. Cover bowl and place in the refrigerator for one hour.
- Prepare filling by adding cream cheese, powdered sugar and vanilla extract to mixing bowl. Beat with an electric mixer until ingredients are combined and creamy. Add in whipping cream and mix on high until mixture forms soft peaks.
- Assemble parfaits by layering Nilla Wafers, cream cheese mixture and strawberries in teardrop glasses or small mason jars. Repeat. Place in a sealable container and place in the refrigerator overnight or at least six hours. This will give the Wafers time to soften under the cream cheese.
- Note: If you don't want to marinate the strawberries in balsamic vinegar, you can drizzle chocolate sauce over the strawberries when layering to give it another dimension of flavor.
