Brussels Sprouts and Bacon Grilled Cheese Sandwich is made perfect with the addition of Smoked Gouda cheese and a drizzle of sauce made from Balsamic Vinegar and Honey.
Y’all. I don’t mean to belabor the point but Brussels Sprouts really are my favorite vegetable right now. Other than corn, I don’t think I’ve loved a vegetable more. Well, maybe potatoes. If you haven’t tried them yet, this Brussels Sprouts and Bacon Grilled Cheese Sandwich will have you craving them.
So I’m always trying to come up with something different to do with these little green cabbages. But this time I didn’t make them differently, I just put them between some things. Like bread, Gouda cheese and bacon. Or, as you may call it, a grilled cheese sandwich. And oh there may be a drizzle of some deliciousness in there too.
Ok so before we get to the recipe, I have to share a little story worth you. For posterity sake. It includes a tip for you too. And most of America will already know this so this is for those folks who don’t.
Tip: If you’re taking out the trash to the dumpster, don’t carry anything valuable in your hands at the same time. Valuable like your keys. That hold the way into safety and warmth.
No joke. Picture it. It’s Friday night and I’ve been having a productive late afternoon of cleaning and then rested my back {cough:nap:cough}. It was late when my back started feeling better and I realized I didn’t have plans for dinner. I proceed to get up and make my way out the door to go get dinner, taking the trash out along the way.
As I’m heaving the bulging bag of trash through the dumpster, I realize my keys have gotten stuck to the bag and off they go sailing into the dumpster with the trash. The dumpster that was dumped just that morning so it’s a fresh dumpster with only a few small bags of trash. All that to say, I could hear my bag hitting the floor. It was like the keys were trying to make a clean getaway.
Now I’m short. As in my armpits come to the entrance of the dumpster. My first reaction is to panic. It’s pitch black dark out. I’m in workout clothes because cleaning my place is a workout in itself. And it’s freezing out. Literally. My apartment door is locked. My car is locked. I don’t know my neighbors and I have nothing to help me lift myself over into the dumpster.
I was so panicked I didn’t even have the sense to use my phone flashlight to assess the situation. So I called someone to come help me. After laughing hysterically he says ok. Then I take a few breaths and it’s like a lightbulb goes off (literally) and I see I have a little wreath hook that I can jimmy to try and snatch my keys. Had I taken another breath I would have seen the ladder I have on my patio with empty containers on it. Luckily the wreath holder worked and after a small amount of panicking I was able to save myself without having to jump into the dumpster.
After that fiasco, we all deserve this deliciousness. For this grilled cheese sandwich, I have left the amount of each ingredient up to you as it depends on how many sandwiches you are making. I used about 4-5 big Sprouts and 1 1/2 pieces of bacon per sandwich. The cheese I thinly sliced until I had enough to generously cover both slices of bread.

Ingredients
- Brussel Sprouts, end trimmed and cut into fourths or smaller
- Salt and pepper, to taste
- Bacon
- Smoked Gouda cheese
- Bread
- Butter
- Optional:
- Olive oil
- Sauce:
- 1/4 c Balsamic Vinegar
- 2 Tbsp Honey
Instructions
- Prepare sauce by adding balsamic vinegar and honey to a medium saucepan. Bring to a simmer and cook until mixture thickens.
- Cook Brussels Sprouts and Bacon according to your preference.
- Option 1: Cut bacon into 1 1/2 inch pieces and cook in a skillet. Once crispy, remove from pan and drain on a paper towel covered plated. Cook Brussels Sprouts in a small amount of oil. Season with salt and pepper. Remove from skillet. Drizzle sauce on Brussels Sprouts.
- Option 2: Prepare two baking sheets - one with foil and one with parchment paper. Place bacon on foil covered sheet. Drizzle oil on Brussels Sprouts and season with salt and pepper. Mix together then place on parchment covered sheet. Place both sheets in the oven and set oven to 375 degrees. Cook for 20 minutes or until bacon is cooked crispy. Cut bacon into bite size pieces. Drizzle sauce on Brussels Sprouts.
- Prepare grilled cheese sandwich by placing pat of butter in a skillet over medium heat. Once hot, add two slices of bread. Let one side start to toast then flip over. Reduce heat another notch.
- Add cheese to each piece of bread and let start to melt. Once cheese starts to melt slightly, add Brussels Sprouts and bacon to one slice of bread. Top with remaining piece of bread and flatten slightly to help cheese melt.
