Now that the holidays are over, it is time to start concentrating on the next big holiday. Yes, folks I’m talking about playoff football and the Big Game.
I’ve been thinking for some time now on what I wanted to make for the upcoming games. You think I’m kidding but I’m not. Some friends don’t understand how football games impact my schedule but they do. I make plans around the games.
And food is always a big part of watching the games. This year I decided to go a little different on my tailgate food and try some tamale bites.

Now, back to the goodness of these tamale bites. My father and I are usually the ones who are watching the games together when I am home and he loves my tamales. So I knew I wanted to incorporate tamales some how for our game watching appetizers. If you’re like me, you probably have some leftover meat from making tamales during Christmas. I had a couple of different types left over so I used that but also made some beef tamale bites. Yummy.
When I was in Walmart over the holidays, I grabbed a few bottles of El Yucateco® sauces in a variety of flavors. These hot sauces are made from habanero hand picked from their own fields. I used the Red Habanero Hot Sauce for the tamale bites. This is the perfect “all purpose” sauce. It packs a little more kick then the average hot sauce but with far less vinegar, so you get the true flavor of the pepper. I also love that the jars are small so you can take them with you for tailgating.
These tamale bites are perfect appetizers for watching football or any other gathering. Plus they take a fraction of the time of tamales and if you’ve made your own tamales, you know that’s a big plus. Enjoy!
Tamale Bites
Serves 1 Tamale Bite
These tamale bites are filled with little bites of goodness to give you a small bit of a tamale-like appetizer.

Ingredients
- Tamale Bites
- Masa:
- 2 c masa
- 2 tsp baking powder
- 2/3 c lard, melted
- 1 1/2 -2 c Chicken stock, warmed
- 1 Tbsp Chili powder
- 1 tsp Ground cumin
- 1 Tbsp El Yucateco® Red Chile Habanero
- Filling:
- 13 oz Ground beef
- 1/2 tsp Onion powder
- 1/2 tsp Garlic powder
- 1/2 tsp Smoked paprika
- 1/4 tsp Ground cumin
- 1/4 tsp Salt
- 1/4 tsp Pepper
- 1 Tbsp Tomato paste
- 2 Tbsp El Yucateco® Red Chile Habanero
- Topping:
- Cotija cheese
- Cilantro
Instructions
- Preheat oven to 350 degrees.
- In a large mixing bowl, add all masa ingredients and mix together.
- Start with 1 1/2 c stock and add more as needed to get the masa to stick together when forming the dough.
- Add ground beef and spices to sauté pan.
- Cook beef until browned.
- Add tomato paste and hot sauce.
- Mix together and cook for additional five minutes.
- Prepare two 24-tin mini muffin tins by spraying with cooking spray.
- Using a tablespoon cookie scoop make 40 balls of dough and place in tins. Using the back of the scoop form wells in the tins.
- If using leftover tamale fillings, warm up meat. If using ground beef, evenly divide among the 40 tins.
- Place tins in the oven and bake for 15 minutes.
- Let cool for 10 minutes. Using a butter knife, carefully remove the tamale bites from the tins.
- Garnish with cotija cheese and chopped cilantro.
