I know I probably say this every year but Christmas has kind of snuck up on me this year! In early November I was ready to put up my Christmas tree. But then I got flack from friends for wanting to rush Christmas. So I waited. Then I was rushing to put up all my decorations (and there’s a lot of them) before I left for Thanksgiving. I got about 80% finished then got sick while home for Thanksgiving. That wiped me out for a week then I headed to Disney World.
Normally by now all my decorations are up, my patio is inviting and beautifully decorated, I’ve baked different cookie recipes to give away, my presents are wrapped and I’m generally ahead of the game.
But being sick just wiped me out. Plus it’s been extra busy with work and I just feel behind all around. My inside decorations are all up but I kind of failed on the outside decorations. It’s just not going to happen this year. And I’m ok with that.
This year the firefighters, friends, family and coworkers may get New Year Cookies. And you know what, it’s ok. We don’t have to push ourselves to get everything done. It will only stress us out. I’m making do this year and I’m a happy camper.
But, I am happy to report that my first Christmas goodie is done and in the books. These little reindeer moon pies are simple to make and bring a smile to everyone’s eyes. Plus they’re delicious! And did I mention they’re simple to make?
Reindeer Cookies aka Moon Pies
Easy to make pseudo moon pies make cute Reindeer Cookies you can share with kids of all ages this Christmas.
Ingredients
- Ritz crackers or Nilla Wafers
- Nutella
- Marshmallow creme
- Pretzels
- Edible eyes
- Cinnamon red hots
- Andes Mints baking chips (or chocolate chips)
- This recipe makes as many as you want to create. 2 cups of baking chips will cover about 16 cookies.
Instructions
- Prepare a baking sheet with parchment paper.
- Begin by spreading a dollop of Nutella on half of the crackers (backside of cracker).
- Place about a teaspoon of marshmallow creme on each of the remaining crackers. Use a knife dipped in hot water to make it easy to spread.
- Make a sandwich of the crackers and let set for about 5 minutes. The marshmallow creme will smooth.
- Place tray in the refrigerator for 15 minutes.
- Melt chocolate. (Easy way is to place in microwave safe bowl and heat in :30 second intervals, stirring in between until melted.)
- Dip sandwiches into chocolate and let excess chocolate drip off. (I usually use a fork and pick it up and tap along the edge to let it drip off.)
- Decorate by breaking pretzel in half and using for ears, eyes for eyes and the red hots for the nose.
- Place in the refrigerator to set for 10 minutes then remove and place in airtight container.
