This heat is no joke. This week we have had temperatures in the 100s and I have been suffering with no air conditioning in my car. No worries though because I make up for it by cranking the air up at home.
But even with this weather, I still will turn on the oven to roast me some Brussel Sprouts. Every single week these little cabbages jump in my cart at the grocery store and I love it!
This Frittata incorporates three of my favorites – eggs, turkey sausage and Brussel Sprouts so you know it is a must make at my place. Plus, one serving is 7 Weight Watchers Smart Points so it is a good choice for breakfast, lunch and dinner.
Brussel Sprouts and Turkey Sausage Frittata
Ingredients:
1 c Brussel sprouts, diced
1/2 red bell pepper, diced
1/2 green bell pepper, diced
2 tsp Olive oil
Salt and pepper
1/2 Tbsp butter
3 oz turkey sausage, diced
3 Eggs
2 egg whites
1/3 c 2% Milk
1/3 c Parmesan cheese, shredded
Instructions:
Preheat oven to 400 degrees.
In a medium bowl, add Brussel Sprouts and Bell Peppers. Toss with olive oil, salt and pepper.
On a parchment lined baking sheet, add the vegetables. Place in the oven and roast for 20 minutes.
Reduce heat to 350 degrees.
In a medium bowl, whisk together eggs, egg whites, milk, and 1/2 tsp salt and pepper. Add in cheese and mix together.
Melt butter in an 8-inch cast iron skillet over medium heat. Add turkey sausage and cook for 2 minutes. Add roasted vegetables and toss to combine. Pour in egg mixture.
Place skillet in oven and bake for 30 minutes or until eggs are set.
