A fresh lemon citrus take on traditional Shrimp Scampi that is easy to make and Weight Watchers friendly.
You know how I’m always going against the popular crowd and refuse to do something because the in people are doing it? I was that way with Netflix. I don’t know why but every time someone told me YOU HAVE to get Netflix I would always say nope, not for me and continue watching the Food Network.
I finally got it (read use my sisters account) and I’ve been hooked ever since. In fact, I bought the Amazon Firestick so I could watch it on my television and not just my phone. Best thing ever. Now I never have to leave the house!
Last weekend I finished watching the entire 7 seasons of The West Wing (not all in one weekend. Sheesh.) and I totally wish our real-life political candidates were like those on that show.
After the final episode I needed a pick me up and something quick to eat so I threw together Ina Garten’s Shrimp Scampi but cut it down for one person. Omg this dish is great. Call me crazy but I love lemon more so than garlic so this has a definite citrusy flavor and it’s perfection. The entire dish makes up in the time it takes to make the pasta. Perfection.
Lemon Shrimp Scampi for One
Ingredients:
1 1/2 oz spaghetti
1 1/2 tsp butter
1 1/2 tsp olive oil
1 tsp minced garlic
3 oz shrimp, cleaned, deveined, and tails removed
salt and pepper, to taste
1/8 tsp lemon zest
1 tsp fresh lemon juice
1 Tbsp fresh parsley, chopped
Instructions:
Prepare pasta according to package instructions.
While pasta is cooking, prepare shrimp and sauce.
In a large sauté pan, add olive oil and butter over medium heat. Add garlic and shrimp. Season with salt and pepper. Cook shrimp until pink on both sides, about 3 minutes. Take pan off heat and add zest and lemon juice.
Add drained pasta to the sauté pan. Toss together then sprinkle with chopped parsley.
Serve and enjoy!
