For Christmas I got an Amazon Fire TV Stick and have been obsessively watching Amazon Prime shows and Netflix ever since. Right now I am binge watching The West Wing all over again.
When I worked in politics, I remember being obsessed with this show. I’d leave work, pick up Outback Steakhouse and sit in front of the television and watch it every week. Without fail. And when you work on a campaign, early nights are a thing of the past. Finally my boss asked why I had to leave early once a week and I told him. From then on, we had Outback and watched The West Wing together as a team weekly. Ah the memories.
So that has absolutely nothing to do with this dish but I just had to share. Anyways, I am back on Weight Watchers so roughly about half of my recipes on here will be of the healthy variety. Everything in moderation folks. I’m excited to share with you healthier dishes and I will also be focusing on dishes that feed one or two. But today’s dish will feed a family or you can freeze your individual portions.
At my house, the Bubble Up Pizza Casserole is a huge hit. Another favorite is Taco Soup. So of course that meant I had to combine the two. And the result was mighty tasty. The photo may not be appealing but don’t let that deter you from making this filling dish.
Bubble Up Taco Soup
Ingredients:
3/4 lb lean ground beef (I used 95%)
Salt and Pepper, to taste
Garlic Powder and Onion Powder, to taste
1 1/2 Tbsp taco seasoning
1/2 c water
1 c black beans, drained and rinsed
1 c kernel corn, drained
1 c Chunky Salsa, mild
1/2 c Mexican Shredded Cheese
1- 6ct pkg refrigerated Biscuits
Instructions:
Preheat oven to 350 degrees.
Brown beef over medium heat. Season with Salt, Pepper, Garlic Powder, and Onion Powder to taste. Once browned, drain meat. Return to heat and add taco seasoning mix and 1/2 cup of water. Let cook for 5 minutes.
Turn off heat and add beans, corn, and salsa. Cut biscuits into fourths. Add to beef mixture and stir to combine. Pour mixture into 8×8 baking dish. Top with cheese and mix together. Bake for 35-40 minutes or until biscuits are cooked.
