Are you a football fan? Do you have a favorite team? I do, but unfortunately my team isn’t in the run to be in the big game this year.
But that isn’t going to stop me from having a get-together to watch it! I love football so much that I’ll watch every playoff game and have a party for the big game. This year our party will probably include just family so I’m gathering all our family favorites so we can sit back and enjoy the game, commercials and half-time.
One thing I always have in the freezer is Red Baron Classic Crust Pepperoni. Oh. Em. Gee. Have you had this pizza yet? They are so good and the entire family love them. It seems we are always fighting for that last piece of pizza. The crust cooks up perfectly but I like mine a little extra crispy, as evidenced by the photo. And there is a little bit of spice to the pepperoni which just enhances the flavor. With so many flavors to choose from, there’s something for the entire family.
When I was at Walmart picking up a couple of pizzas and my favorite Key Lime Pie dessert to watch the playoff games, I decided to get the ingredients to make some brownies for the kiddos. We always have to have a little special treat to keep them entertained. I even went a step further and made these little bites of deliciousness to look like little pizzas! Together, these are the perfect combo for your game day treats.
And be sure and visit Red Baron to try and win some awesome tailgate prizes.
Brownie Bites
Ingredients:
4 Tbsp unsalted butter
8 oz bittersweet chocolate baking bar, chopped
2/3 c semisweet chocolate chips, divided
2 large eggs
2/3 c sugar
1 1/2 tsp instant coffee granules
1 tsp pure vanilla extract
1/3 c all-purpose flour
1/4 tsp baking powder
1/4 tsp kosher salt
2-3 Tbsp heavy cream
Chocolate Candy pieces
Instructions:
Prepare a muffin top pan by spraying with cooking spray.
Preheat oven to 350 degrees.
Place a saucepan with water on the stove and bring to a simmer. Place butter in a metal or glass bowl and set over simmering water and melt. Add the 8 ounces of baking bar to the butter and remove from heat. Stir to melt the chocolate then set aside to cool.
Add the eggs, sugar, coffee and vanilla to a mixing bowl. Using an electric mixer, beat on medium-high speed for about 3 minutes, or until light and fluffy. Add in the cooked chocolate and stir to combine.
In a separate bowl, add the flour, baking powder, salt and 1/3 cup chocolate chips. Add the flour mixture to the batter and gently fold in until combined.
Using a cookie scoop, evenly divide the brownie mixture in the twelve muffin top pan. Bake for 11-14 minutes. Cool to room temperature.
Cut up your favorite chocolate candies. Melt 1/3 cup chocolate chips with 2 tablespoon of heavy cream (using the simmering pot method). Add additional cream to thin the chocolate. Place chocolate in a plastic baggie then cut a small hole in the corner and drizzle on the brownies. Top with chocolate candy pieces.
