So you know how sometimes you have leftovers in your refrigerator or freezer and you know you need to use them up before they go bad so you make a fabulous dessert for yourself with them? Please tell me I’m not alone. I had this pie crust and strawberries in the refrigerator and these peaches in the freezer and I was just itching to use them up. Luckily they are the main ingredients in this Galette.
It’s quick and easy to make. By letting the fruit marinate in the refrigerator for a little while, it gives the flavors time to meld together. Enjoy!
Strawberry & Peach Galettes
Ingredients:
1/2 lb strawberries hulled and sliced
1 c peaches, sliced
1/2 tbsp sugar
1 tbsp brown sugar
1/2 tsp cornstarch
1 tbsp balsamic vinegar
1 ready made 9 in pie crust
Milk
Sanding sugar
Optional:
Whipped cream
Instructions:
In a medium bowl, add strawberries and peaches. Mix in sugar, brown sugar, cornstarch and balsamic vinegar. Mix together to combine.
Cover and refrigerate for 30 minutes. Divide pie dough into two pieces. Roll out each pie dough into two rounds.
Prepare a baking sheet by placing parchment paper on cookie sheet. Spray parchment paper with Pam Spray. Place pie dough on paper.
Divide fruit among both pie dough rounds. Fold up the ends (as pictured). Brush dough with milk and sprinkle with sanding sugar.
Bake at 400 degrees for 23-25 mins.
Optional: Top with whipped cream.
