Did you have a cold front come through your town this week? We did and it was in the 70s all day yesterday! I was happy all day. This body was not meant for summertime. It performs best in fall like weather.
Add to that my car is on its last leg and the air conditioning went out. It would cost more to fix it than the car is worth. Probably. Ok, not really but I decided to suffer through the last months of summer.
While the weather was cool and I didn’t have to ride around with the windows down to breathe, I went all over town running errands. Then came home and turned on the oven.
Recently I went to have lunch with some friends at Rosa’s. Do you have a Rosa’s in your town? Such good Mexican food for a fast food joint. I got their Taco Salad in the bowl and fell in love. And then I thought how could I recreate it without the bowl? You know me, always trying to find ways to cut the calories.
Enter this amazing pizza that I had a couple of weeks ago. I’m still thinking about it! The dough was store bought but probably my favorite now. So, of course, I had to make that taco salad into a pizza. It was divine. A new take on Taco Tuesday. Or Taco Thursday.
Fiesta Taco Pizza
Ingredients:
1 tsp olive oil
4 oz ground beef
2 Tbsp onion, diced
1/2 tsp taco seasoning
1 Tbsp water
Herb & Garlic Pizza Crust
1/4 c Refried beans
1/2 c Fiesta Pepper Jack Cheese, shredded or your favorite cheese
Green onions, diced
Tomatoes, diced
Instructions:
Preheat oven to 375 degrees.
In a medium sauté pan, add olive oil. Heat over medium heat then add ground beef and onions. Cook until meat is browned. Drain and then add back to the pan.
Add in taco seasoning and water. Mix together.
Heat refried beans in the microwave for :30 seconds.
Place one pizza crust on cookie sheet. Spread beans on crust. Sprinkle beef and onions over beans. Top with cheese.
Place in oven and bake for 13-15 minutes.
Remove from oven and top with green onions and tomatoes.
