My birthday is on the Fourth of July and every year I have dreams of having a picnic while getting ready to watch the fireworks show. Then I remember how hot it is in Texas in July, the mosquitoes, the ants and I abandon those dreams.
But if I did have a picnic, I’d serve fried chicken, some corn on the cob and this here baked potato salad. Now when it comes to baked potatoes, I am plain Jane. I put butter and bacon on it and that’s pretty much it. Sometimes I’ll go crazy and put BBQ chicken on it! But really, all I need is butter and bacon.
So I was surprised that I liked this dish with everything in it. My friend Michelle told me about a baked potato salad she made one weekend and after hearing her describe it, I put it on my “to be made” list. I added some ranch dressing mix and other spices because, of course, I have to adapt every recipe I make.
The minute I took a bite of this dish, my eyes rolled up in the back of my head and I knew this would be a go-to dish for me. It’s so simple yet so tasty! Perfect for your next get-together, BBQ or picnic. If you do have a picnic, send me a picture so I can live vicariously through you, ok.
Bacon Ranch Baked Potato Salad
Ingredients:
2 Russet potatoes
Olive oil
Salt and pepper, to taste
1/2 c Sour cream
2 Tbsp Mayonnaise
1 tsp Ranch dressing mix
1/4 tsp Smoked paprika
1/8 tsp Ground mustard
1 Tbsp Green onions, diced
4 slices Bacon, cooked crispy and chopped
1/2 c Cheddar cheese, shredded
Instructions:
Scrub potatoes under running water to get all the dirt off. Pat dry with a paper towel. Take a fork and poke holes in the potatoes. Drizzle a little bit of olive oil over potatoes and rub on skin. Season liberally with salt and pepper. Place on a microwave safe plate and cook in the microwave for 6 minutes. Turn over and cook an additional 5-6 minutes until soft.
Dice potatoes and place in a medium size mixing bowl.
In a small bowl, add sour cream, mayonnaise, dressing mix, paprika and mustard. Mix together to combine thoroughly.
Add sauce to potatoes and toss together. Season potatoes liberally with salt and pepper. Add cheese, green onions and bacon. Mix together and serve.
