My sister took her family out to eat last weekend and my niece came home and talked about the dessert they had. It was a S’mores pazookie but she didn’t really feel like it was representative of a s’mores. And my niece knows s’mores. So I told her how I would do it and she said, “I’d eat that.” Which is a big deal for her.
So, of course I had to come home and make it. This is the perfect date night dessert for two. Or for a fourteen year-old girl.
I can’t wait to make this for my niece when I am home in a couple of weeks. She is going to eat the whole thing by herself. The brownies themselves are gooey and decadent but with the Nutella and melted marshmallows on top – honey please! Out of this world.
If you don’t have mini cast iron skillets, you can make these in a mason jar lid. Only fill them about 1/2 – 2/3 of the way filled because they do rise a bit. Enjoy!
Skillet S’mores Brownies for Two (brownie recipe adapted from Ina Garten)
Ingredients:
1/2 stick unsalted butter
1/2 c plus 1/4 c semisweet chocolate chips, divided
1 1/2 Tbsp unsweetened cocoa powder
1 large egg
1 tsp instant coffee powder
1 tsp vanilla extract
1/4 c sugar
2 Tbsp plus 1/2 Tbsp all-purpose flour, divided
1/2 tsp baking powder
1/8 tsp kosher salt
Nutella
Mini Marshmallows
Ice cream
3 squares of Graham crackers, crushed
Instructions:
Preheat the oven to 350 degrees.
Add water to a sauté pan and bring to a simmer. Add butter, 1/2 c chocolate chips, and the unsweetened cocoa together in a metal bowl. Set bowl on simmering water and stir until the chocolate melts.
Turn off heat and remove the bowl from the pan and allow to cool for 15 minutes. In a mixing bowl, stir together the eggs, coffee powder, vanilla and sugar. Add the chocolate mixture into the egg mixture and mix together. Set aside to cool to room temperature.
In a small bowl, add 2 Tbsp of the flour, the baking powder, and salt and whisk together. Mix it into the chocolate mixture.
Toss the remaining 1/4 cup of chocolate chips and 1/2 tablespoon of flour together in a medium bowl. Drop into the chocolate mixture and fold in.
Spoon the mixture into two individual Lodge 5-inch Cast Iron Mini Skillets. Place on a cookie sheet.
Bake for 22 minutes exactly. Remove from oven and cool slightly. Gently spread Nutella over the brownie. Add mini marshmallows and place under the broiler until they are toasted. Watch them carefully so they don’t burn!
Serve warm with a scoop of ice cream in the middle. Sprinkle graham crackers over the ice cream.
