So I’m going to be in a wedding next year. My cousin Lindsey is getting married and she asked me to be a bridesmaid. Getting all gussied up and prancing around I can do – as long as I’m in flats. But the thing I knew I could rock was helping pull off her bridal shower. Actually it was a couples shower. This past weekend I, along with the other bridesmaids, had a little shower for Lindsey and I was able to make a couple of things for everyone to eat.
The shower was close to my old hometown so I had to use my parents house to get everything together. My mom even commented that I was going to look back on this weekend and cringe because I cooked all weekend. Seriously, every day I was home I cooked something.
Friday night the family celebrated my dad’s birthday and I cooked for everyone. Well, I threw a pot roast in the slow cooker. But in all fairness, I asked my dad if he wanted to go to Outback or have me make a pot roast for him. He chose the pot roast. Neither I, or the kids, were happy about his choice. Sydni even told me I should have suggested pizza or Outback and then he would have chosen Outback. And he made me tear up when I was hugging him goodbye on Sunday because he said it was perfect that his baby made him his birthday dinner. Awwwww. I love that man.
Ok, back to the shower. My cousin Ashley and I were in charge of the food. We had to serve items that “go together like Lindsey and Andy” – get it. Awwww.
My items were all favorites of mine, of course: King’s Hawaiian Poppy Seed Sandwiches, Pecan and Brie Bites, Veggies and Ranch dressing, Crostini with cream cheese and the to-die-for Pineapple Coconut Mango Tequila Sauce.
Oh and these little 3-Ingredient Meatball Appetizers. Seriously. Three ingredients and these little frozen meatballs are transformed into little bites of deliciousness. My nephews loved them so much I had to go get the ingredients and put them in the crockpot before I left on my drive back home. They were happy campers. I’d do anything for those sweethearts.
3-Ingredient Meatball Appetizers
Ingredients:
1 – bag frozen meatballs (any kind – between 50-66 meatballs is average size bag)
1 – 18 oz jar Grape Jelly
1 – 18 oz jar your favorite BBQ Sauce (I used Stubbs original sauce)
Instructions:
Add grape jelly and bbq sauce to slow cooker. Throw in the meatballs and stir together.
Set crockpot on high and let cook for 3-4 hours, stirring a couple of times.
Voila. Enjoy.
