So, it would seem I am back on Weight Watchers. I have joined WW a couple few times, and to be honest, I sometimes do great on it and other times I just pay the fees and still eat what I want.
This time though it feels different. My mind knows that if I keep track and stay within my points, the program works. It really works. I just have to love myself more than food.
And get control of my emotional eating habits. When stress comes up at work, boom I want to put something in my mouth. It doesn’t help that the best sausage kolaches are sold around the corner from my office. Dangerous!
When I’m bored, I want to eat. But lately I have been so sluggish and just zapped of energy. It has a lot to so with my eating habits. So I am changing that. Wish me luck!
I am back to trying to find Weight Watchers friendly meals and this soup is one that I could eat often. Just use your favorite vegetables.
Garden Vegetable Soup (Adapted from Weight Watchers)
Ingredients:
2 medium Squash, diced into 1/2 inch pieces
2 medium Zucchini, diced into 1/2 inch pieces
1 1/2 c baby carrots
1/2 red bell pepper, diced into 1/2 inch pieces
1/2 green bell pepper, diced into 1/2 inch pieces
2 Corn on the cob, cleaned and cut into 3 pieces each
1/2 Cabbage, roughly chopped
6 cups beef stock
Salt and pepper, to taste
Instructions:
Place all ingredients, except salt and pepper, into a large stock pot. Bring to a boil. Cover and reduce heat to a simmer for 20 mins. Season with salt and pepper.
Serves: 6
1 Weight Watchers Plus Points per cup
