I’m not sure why the only time I eat fish is when I’m on Weight Watchers. Or when I’m eating it fried. Or during Lent.
It’s like I forget that I love fish. Add to that it’s inexpensive and so easy to make I’m not sure why I don’t have it every week.
Well I’ve had it a lot recently and let me tell you, I love seafood! You can easily make it in a foil pack and have a simple one dish meal with practically zero cleanup. Not to mention, it is a Weight Watchers friendly recipe.
With so many wonderful vegetables in season, you can also add almost whatever vegetables you want to the foil pack and it will taste amazing. Try this method with your favorite fish and vegetables. The tilapia was so smooth and every bite with the mayonnaise spread was unbelievably good. The relish was spicy but the perfect complement to the fish.
Foil Packet Tilapia and Corn Relish (recipe adapted from Rachael Ray)
Ingredients:
2 Tbsp reduced calorie mayonnaise
1/2 tsp smoked paprika
1 corn on the cob, kernels cut off the cob
1 Tbsp tomato, finely diced
1 Tbsp green bell pepper, finely diced
1/4 tsp seasoning salt
2 Tilapia fillets, 4 oz each
Salt and black pepper, to taste
Foil
Pam cooking spray
Instructions:
Preheat oven to 425 degrees.
In a small bowl, combine mayonnaise and smoked paprika. Mix until combined.
In another small bowl, add corn, tomatoes and green pepper. Sprinkle with seasoning salt.
Layer two pieces of foil on top of each other (enough for the fish and to fold it up). Spray with Pam spray. Spread a small smear of the mayonnaise mixture on the foil.
Season tilapia with salt and pepper. Place fish on the mayonnaise on the foil. Add half the mayonnaise mixture on top of the tilapia fillet. Place half the corn relish on top of the fish. Fold the foil over lengthwise then roll up both ends to form a packet.
Repeat with remaining fillet, mayonnaise mixture and corn relish. Place foil packets on a cookie sheet and place in the oven.
Bake for 20 minutes.
