If you know me at all, you know I love party size food. It just brings a smile to my face. I think that’s part of the reason I enjoy going to special events. Well, the food and to people watch.
This recipe uses wonton wrappers to make mini taco shells. Genius. Wonton wrappers can be filled with just about anything and they will be delicious. If you can’t find Wonton Wrappers, look in the produce section of your grocery store. Weird I know, but that’s where they are. At least in my stores.
A friend and I gobbled these little treats up before going to see a movie. They definitely will fill you up and are perfect for a meal or an appetizer.

Taco Cups
Ingredients:
1 lb ground beef
3 tsp taco seasoning
Salt and pepper, to taste
2 Tbsp green bell pepper, diced
2 Tbsp red bell pepper, diced
1 – 16 oz can red kidney beans
1 – 15 oz can whole kernel sweet corn, drained
24 wonton wrappers
Pam spray
Cheddar cheese, shredded
Lettuce, roughly chopped
Tomatoes, diced
Instructions:
Preheat oven to 350 degrees.
Using a large skillet, add ground beef and cook over medium heat. Add taco seasoning, salt and pepper to the browning meat. Mix together.
Once the meat has browned, add the bell peppers and cook for an additional few minutes. Add the beans and corn. Mix together and cook for an additional 3-5 minutes.
While the meat is cooking, prepare the wonton wrappers by spraying 2 12-muffin tins with Pam spray. Add one wonton wrapper to each muffin space and push it down into the space.
Add some of the meat mixture to each wonton cup. Place in the oven and bake for 13-15 minutes. Top with shredded cheese and place back in the oven for 1-2 minutes, or until cheese is melted.
Top with lettuce and tomatoes.
