Potato and Egg Hash

I am a meat and potatoes girl. But sometimes you just have to eat a meal without meat. This past weekend I decided to make myself one of my favorite breakfast/brunch items – fried potatoes. I love cooking potatoes in a skillet. This time though, I incorporated a fried egg on top and it was simply divine. This dish was so filling and so easy to make. Of course, if you want your meat, you can easily add ham, bacon, or sausage to the dish.

I usually make my potatoes with olive oil but I was recently contacted by Mazola to try their corn oil. When they shared that a recent study showed corn oil significantly reduces cholesterol with more favorable changes in total cholesterol (TC) and LDL-C than extra virgin olive oil, I knew I wanted to give it a try. I will try anything that is going to help me improve my health while cooking things that I love.

The Mazola oil also helped keep the potatoes soft and evenly cooked them. I was so satisfied that I had potato and egg breakfast tacos the next day with the same great results.

Potato and Egg Hash

Ingredients:

1 small russet potato, peeled and diced into small pieces
1/4 green pepper, finely diced
1/4 red pepper, finely diced
2 Tbsp onion, finely diced
Cheddar cheese
Egg
Mazola corn oil
Salt and pepper, to taste

Instructions:

Preheat a skillet to medium heat. Add about a tablespoon of Mazola corn oil to the pan. Let the oil get warm then add the potatoes to the pan. Season with salt and pepper. Toss and cover the pan. Cook for about 10-12 minutes, stirring occasionally.

Add the onions and bell peppers to the potatoes in the skillet.  Toss together. Cover the skillet again and cook for 7-8 minutes, stirring occasionally.

Remove potatoes from heat and place on a paper towel covered plate to drain.

Add a drizzle of oil to the pan and add the egg.  Season with salt and pepper. Let cook for a few minutes until the egg is cooked to your liking.

Add the potatoes to your serving plate. Sprinkle a small amount of cheese on top of the still warm potatoes. Add the fried egg on top.

    Everything's better with a fried egg on top! "Cooked to my liking" is soft & runny just like in your photo.
