One thing I miss about working at my old job, besides the friends I left behind and helping others, is definitely this Apple Chicken & Walnut Salad I used to have for lunch nearly every day.
There was a Randall’s grocery store just down the road from my office so I would frequently go there to pick up lunch – which usually consisted of a Grilled Chicken Caesar salad. One day they were out of my favorite salad and I remembered one of my coworkers raving about this one. So I gave it a try.
And let me just tell you, I fell in love with this dish that day. Every little thing about this salad was perfection. Absolutely perfect. It came with blue cheese crumbles but since I’m not a fan, I left it out.
With most salads, I never finish them all. But this one, I ate every scrumptious bite. I would even wait for them to make me one if they were out of the pre-made version. Of course, I had to try and recreate it now that I don’t have a Randall’s within 30 miles of me.
I found a recipe for a Sweet Onion Dijon Dressing on, of all places, cha-cha. I mixed it up a bit to come up with this dressing. I’m happy again.
Apple Chicken & Walnut Salad with Sweet Onion Dijon Dressing
Ingredients:
Dressing:
1/4 c distilled vinegar
1/4 c sweet onions, finely diced
1/4 c grapeseed oil (or olive oil)
1 Tbsp country Dijon mustard
1 Tbsp mayonnaise
1 tsp honey
Dash of salt and pepper
Salad:
Mixed greens
1 green and 1 red apple, cored, sliced and diced
2 cups grilled chicken (I usually buy a bag that requires you to microwave to heat up)
1 bag cranberries and glazed walnuts
Instructions:
In a small frying pan, add vinegar and onions and cook for 5 minutes on low-medium heat. Let cool.
Add all remaining dressing ingredients and cooled onions to a blender. Blend together until smooth.
Create salad by adding salad greens, apple slices, grilled chicken and cranberry walnut mix on a plate. Drizzle salad dressing on top. Enjoy!
