I am one of those who believes you should treat every day like Valentines day and show your loved ones how much you care for them on a daily basis.
Adding this little touch of making your muffins heart shaped is a good way to start any morning. It is adorable and so simple!
The muffins are delicious, low-fat and substantial. They were a lot denser than I thought they would be but I loved the taste. This recipe comes from Gina at Skinny Taste. Gina has the best Weight Watchers friendly recipes around.
Low Fat Banana Muffins
(Recipe slightly adapted from SkinnyTaste.com)
Ingredients:
3 1/2 ripe medium bananas, mashed
1/4 cup unsweetened apple sauce
1 1/4 cups unbleached all purpose flour
3/4 tsp baking soda
1/4 tsp salt
2 Tbsp butter, softened
1/2 c light brown sugar
2 large egg whites
1 tsp vanilla extract
1 tsp ground cinnamon
12 marbles
Instructions:
Preheat oven to 350°. Line a 12-count muffin tin with liners.
In a small bowl, whisk together flour, baking soda and salt.
In a separate large bowl, using an electric mixer, beat butter and sugar until creamed together. Add egg whites, mashed bananas, apple sauce, vanilla and cinnamon. Beat for 3-5 minutes until mixture thickens. Add in flour mixture and beat to combine thoroughly.
Using a cookie scoop, pour batter into muffin tins. Place a marble on the outside of muffin liners to form a heart shape.
Bake for 18-20 minutes, or until a toothpick inserted in the center comes out clean.
Note: If your bananas are not ripe, microwave for 1 minute intervals until mashable.
