Lately I’ve been trying to incorporate more meals that are Weight Watchers friendly at home. This is one I adapted from the Weight Watchers Message Boards and it has been around for a while.
While I enjoyed it, it is safe to say the kids devoured it. My niece, who hardly eats anything I cook because she is so picky, ate this. Then asked for seconds. Then asked to take some to school the next day. And then ate the tiny bit remaining as her afternoon snack after school. Right after that she asked me to make it again!
I kid you not. I have found a dish the girl loves. It will definitely go on my to be made again list. As a matter of fact, I have the ingredients in my refrigerator and pantry already. My nephew enjoyed it too and described it as a lasagna but for pizza.
Bubble Up Pizza
Ingredients:
1 lb lean ground beef
Salt and pepper, to taste
1/2 tsp Minced Onions
1/2 tsp Minced Garlic
1 tsp Salt free Italian Seasoning
1/2 tsp Onion Powder
1/4 tsp Dried Basil
2 – 8 oz cans Tomato Sauce
Pepperoni slices
1 large container Pillsbury Buttermilk Biscuits (8 count biscuits)
1 1/2 cups mozzarella cheese, shredded
Instructions:
Preheat oven to 350 degrees.
In a large sauté pan, add ground beef and spices. Brown meat.
Cut each biscuit dough into four pieces. Add sauce, pepperoni slices and dough to the meat. Gently stir to ensure sauce covers dough.
Spread mixture into a 9×13 casserole dish. Bake for 25 minutes. Add cheese and return to oven for 7-10 minutes or until cheese is melted.
