My weakness in life is sweets. Specifically cupcakes. It is impossible for me to see a cupcake and pass it up. Usually I’ll want two or three.
Now that I’m on Weight Watchers I don’t necessarily have to give up cupcakes, I just have to make smarter choices.
Enter the 2-ingredient cupcake. Seriously. You basically take any cupcake mix and add a 12-oz diet soda to the mix. That is it. It doesn’t taste as rich as a regular cupcake but for someone trying to save a few calories, it will definitely do the trick.
These have been on the Weight Watchers message boards for a while and are now making their way to Pinterest. So simple and good.
2-Ingredient Strawberry Cupcakes
Ingredients:
1 15.25 oz box Strawberry cake mix
12 oz Diet 7-up
Instructions:
Preheat oven to 350 degrees.
Add both ingredients to a bowl. Whisk mixture together (or use a mixer) until lumps are gone. Using an ice cream/cookie dough scoop, add batter to lined muffin tins.
Bake for 20 minutes or until a toothpick comes out clean.
If you need to add icing, you can use Cool Whip Lite.
