Have you ever had a meal and years later still thought of that meal? No? Then you haven’t had the best ever chicken and waffles.
My favorite of this meal came in Atlanta GA at Gladys Knight’s restaurant. Oh heavens. I had never had those two things together before, and let me tell you, they were made for each other. I’ve had chicken and waffles in other places since then but nothing compares to it.
Until now. If you haven’t heard of Miss Robbie then you don’t watch enough tv. Miss Robbie owns Sweetie Pie’s in St. Louis and apparently has some good southern food on her table. OWN had several of her recipes on their site so I thought I’d give her fried chicken a try. It’s a definite must. Especially with waffles.
And my nephew Jacob said the entire meal was good but the waffles were his favorite. I love that kid!
Honey Fried Chicken (recipe slightly adapted from Miss Robbie)
Ingredients:
2 c all-purpose flour
2 tsp salt
2 tsp ground black pepper
1 1/2 tsp smoked paprika
4 tsp garlic powder
1 tsp onion powder
1 c milk
2 eggs
8 chicjen drumsticks
1-2 cups vegetable oil for frying
Instructions:
Rinse chicken in cold water. Pat dry.
In medium bowl mix together flour, salt, pepper, smoked paprika, onion powder and garlic powder.
In a separate bowl whisk eggs. Add milk and whisk until combined together.
Heat oil in skillet to 350 degrees.
Dredge chicken in flour mixture, then egg mixture and then once again in flour. Shake off excess flour and place in hot oil.
Let cook for 10-12 minutes on each side until the juices run clear.
Honey Chicken Glaze
3 Tbsp butter
1/2 c sugar
2 Tbsp honey
1 Tbsp soy sauce
Instructions:
Melt butter in a medium sauce pan.
Add sugar, honey and soy sauce. Stir over medium heat until sugar is dissolved. Drizzle sauce over fried chicken.
Waffles (recipe slightly adapted from Allrecipes.com)
Ingredients
2 c all-purpose flour
1/2 tsp salt
4 tsp baking powder
2 Tbsp sugar
2 eggs
1 1/2 c warm milk
1/3 cup butter, melted
1 1/2 tsp vanilla extract
Instructions:
Preheat your waffle iron.
In a large mixing bowl, whisk together flour, salt, baking powder and sugar.
Using a separate bowl, add the eggs and beat to break up. Whisk in the milk, butter and vanilla. Pour wet mixture into the dry mixture and beat until blended.
Ladle the batter into the preheated waffle iron. Cook the waffles until golden and crisp.
Serve waffles with chicken on top. Drizzle with maple syrup.
