Three-Bean Chili is simple and tasty.
I am so ready for winter to be here. It doesn’t look like my neck of the woods is going to get much of a fall so I’m moving right along.
This dish is a combination of several recipes I saw online. I took a couple of ideas from each of them and created this. If you like your chili spicy, add all of the Rotel tomatoes. I’m a mild person myself and half the can was more than enough for me.
Three Bean Chili
Ingredients:
2 lbs. ground beef
1/2 Onion, diced
1 – 16 oz can Red Kidney beans, undrained
1 – 15.5 oz can Cannelloni beans, undrained
1 – 15.5 oz can Chili beans, undrained
12 oz beef broth
1/2 can of Rotel tomatoes
1 – 14.5 oz can Stewed Tomatoes
1 – 6oz can Tomato paste
1 heaping tsp Chili powder
Instructions:
In a skillet, brown ground beef and onions. Drain. Add to crockpot.
Add remaining ingredients to crockpot. Mix all ingredients until fully incorporated. Cook on high 4-6 hours.
Serve with cornbread.
