I was home sick on Monday and needed some comfort food. Meatloaf seems to be my go-to dish for times like this and I’ve had this recipe from The Pioneer Woman in my to-be-made stash for a while.
As a lover of bacon, I had high hopes for adding it to this meatloaf. But it didn’t bring anything special to the dish for me and I kept wondering if it was cooked all the way – hence my adding additional cooking time.
The meal, nonetheless, was very good and just the comfort meal I was looking for dinner.
Pioneer Woman Meatloaf (recipe slightly adapted from The Pioneer Woman)
Ingredients:
1/2 c 2% Milk
3 slices Mrs. Baird’s White Bread
2 lbs Ground Beef
1/4 c Grated Parmesan Cheese
Salt and freshly ground black pepper
1 tsp dried parsley
2 Eggs, beaten
5 slices Bacon
Sauce:
1 cup Ketchup
1/3 c Brown sugar
4 tsp yellow mustard
2 tsp Worcestershire sauce
Instructions:
Preheat oven to 350 degrees.
In a small bowl, pour milk over bread and let soak for a couple of minutes.
In a separate bowl, mix together ground beef, Parmesan cheese, salt, ground pepper and parsley. Add in beaten eggs to meat mixture. Using your hands, mix thoroughly then form into a loaf pan.
Place bacon slices over the formed loaf and tuck under the meat.
Mix all sauce ingredients together and stir until combined thoroughly. Pour 1/3 of mixture over meatloaf/bacon form and bake for 45 mins. Pour another 1/3 over loaf and cook or additional 30 minutes. Serve with remaining sauce and mashed potatoes.
