I love mini foods and am always looking for new things to try. I wanted to make some mini tacos and about the same time I came across these “cheeseburger cupcakes” on Pinterest. They looked delicious and I knew the kids would try them.
I wasn’t sure how they’d handle the stacked part so I made them in a mini muffin tin instead and just did one layer.
The ketchup and mustard along with the cheese mixed in with the beef makes it taste very much like a cheeseburger. Jacob, my own little Mikey, loved it.
Another great addition to a party menu.
Cheeseburger Mini Bites aka Cheeseburger Cupcakes
(Recipe slightly adapted from Emily Bites)
Ingredients:
1/4 lb lean ground beef
1 tsp McCormick Hamburger Seasoning
Salt and pepper, to season
2 Laughing Cow Creamy Swiss wedges
2 T ketchup
2 tsp mustard
16 wonton wrappers
shredded cheddar cheese
Grape tomatoes, chopped
Iceberg lettuce, chopped
Instructions:
Preheat oven to 350 degrees. Lightly mist 12 cups in a mini muffin tin with Pam cooking spray and set aside.
In a large skillet, add ground beef and seasonings. Cook until browned. Drain beef and add to a microwave safe bowl. Add cheese, ketchup and mustard. Microwave for :45 seconds then mix together until completely combined.
Add wonton wrappers to mini muffin tins (every other tin). Spoon beef mixture into the cups. Top with shredded cheese. Bake for 15 minutes until golden brown. Let cool then add lettuce and tomatoes.
Repeat with remaining wontons and beef.
Note: The wonton wrappers are usually found in the produce/deli area.
