For Father’s Day I knew I wanted to make some beef for my dad. He is the ultimate meat and potatoes man. Oh he’ll eat anything I make but he really loves his beef.
When I went looking for recipes I remembered a while back on Twitter there was a lot of talk about Food Network’s Sunny Anderson’s short ribs one day. A little search brought me to this recipe for Easy BBQ Short Ribs.
I knew it would be good when I took a little taste of the BBQ sauce and thought, well now that’s good. Not too sweet and not vinegary.
I served these with some grilled potatoes and grilled corn (recipes coming).
Sunny Anderson’s Easy BBQ Short Ribs
(recipe slightly adapted from Sunny Anderson)
Ingredients:
2 1/2 lbs boneless beef short ribs
salt and freshly ground black pepper, to taste
Montreal steak seasoning, to taste
2/3 cup light brown sugar
1 tsp paprika
1/2 tsp garlic powder
1/2 tsp onion powder
1 Tbsp Balsamic vinegar
1/2 tsp dried ground thyme
2/3 cup ketchup
1 tsp yellow mustard
1 Tbsp Worcestershire sauce
Instructions:
Preheat oven to 300 degrees F.
Place short ribs in a 13 by 9-inch baking dish and season with salt, pepper, and Montreal steak seasoning to taste.
In a small bowl, combine remaining ingredients and whisk until mixed completely. Pour sauce over ribs and toss well, coating all the pieces. Cover with aluminum foil and roast until cooked through and tender, about 2 1/2 hours.
If meat is still not done, remove the foil and cook for an additional 30 minutes to brown the top.
