I don’t know about you but tamale making makes me nervous. So last year I went to a cooking class at Central Market to try my hand at the beast that is tamale making.
Unfortunately we weren’t given a very good recipe to follow along with what the instructor was making so I don’t have that to share with you. But I do plan to recreate them soon so I can share that recipe with you once I do get to it.
We were given the masa and filling that the chef made and we were then instructed in making them. Each of us were then given a dozen to take home and cook for our own eating pleasure.
I’m glad I took this class because to me the hardest part is getting the masa the right consistency and spreading it all out on the husk. Now that I have that experience, I feel I can tackle it on my own. Hopefully I’ll be making my own very soon.
If you haven’t had a chance to take a class at Central Market (or Whole Foods) yet you should. They vary in how hands on experience it is but it does help you feel more comfortable in the kitchen.
