I love meatloaf. Love, love, love it. I’ve found the one I like and make that often (even in the form of meatballs and hamburgers) so I’m always excited when I find a new recipe for it. This one used ground ginger in the meat and brown sugar and ketchup on the top. The boys and the parents absolutely loved it. It always does my heart good when the boys eat my food.
Brown Sugar Meatloaf
(recipe adapted from Allrecipes)
Ingredients:
1 lb. lean ground beef
1/2 cup milk
1 egg
Salt and black pepper, to taste
1/8 tsp ground ginger
3/4 c Italian seasoned breadcrumbs
1/4 cup packed brown sugar
1/4 cup ketchup
Instructions:
Preheat oven to 350 degrees. Spray a loaf pan with Pam spray.
In a bowl, mix together beef, milk, egg, spices and breadcrumbs. Shape into a loaf and place in the pan. Pat brown sugar on top and sides of meat. Drizzle ketchup on top of brown sugar. Bake in oven for 80 minutes.
