When I saw this mini apple crostata pop up on my screen I knew I needed to make it. And as it so happened I had all of the ingredients on hand. Well, except for sugar but brown sugar was here and ready to do the job.
When I took these out of the oven I was a little disappointed because they looked dried out but once I tasted them I was very pleased.
Note: I made them again just so I could try them with ice cream. Absolutely delicious.
Mini Apple Crostatas
(recipe inspired by Pillsbury)
Ingredients:
1 pre-packaged pie crust, divided into 4 equal pieces
2 Granny Smith apples, peeled, cored and thinly sliced
Juice of 1/2 lemon
3 Tbsp Brown sugar
1 tsp ground cinnamon
1/2 tsp ground nutmeg
1 tsp flour
Topping:
Milk
Brown sugar (or sugar)
Instructions:
Heat oven to 425°F.
Spray a baking sheet with Pam Spray. Place the dough pieces on the sheet.
In a mixing bowl add the apples and the lemon juice. Mix to combine. In a separate bowl, add the remaining ingredients and mix well. Add the spice mix to the apples. Toss until completely mixed.
Divide apple mixture among the dough (note you may have some left over). Fold over dough and pinch to seal the sides. Drizzle remaining sauce from the apple mixture into the crostatas. Brush on a bit of milk on the crust an dust with sugar.
Bake 15 to 18 minutes or until crust is baked completely.
