One of my favorite cookies to make is a Spritz cookie. It’s also one of the simplest to come together and fun to make with the kids. My cousin Courtney really likes these cookies so I make some every Christmas for her. This is a different recipe from what I normally make but still has a good flavor to it. You can’t go wrong with a Spritz cookie.
Butter Rich Spritz Butter Cookies
(Recipe slightly adapted from Allrecipes)
Ingredients:
2 1/2 c all-purpose flour
1/2 tsp salt
1 c butter, softened
1 1/4 c confectioners’ sugar
2 egg yolks
1 tsp almond extract
1/2 tsp vanilla extract
Sanding sugars
Instructions:
Preheat oven to 400 degrees F.
In a medium bowl, whisk together flour and salt.
In a separate mixing bowl, cream together butter and sugar. Add egg yolks and mix together. Pour in extracts and combine. Slowly add in flour and mix together.
Fill your cookie press with dough and press out cookies onto ungreased cookie sheet. Sprinkle sanding sugars for decoration. Or alternately, separate dough and mix in colored gels to make colored dough.
Bake for 6-8 minutes. Do not let cookies overbrown.
** Note: If you don’t have time to let the butter soften, you can put the butter between wax paper and then roll with a rolling pin to “soften” it.
