One of my favorite things to eat at Thanksgiving is Green Bean Casserole. But now that I have seen the light and eat fresh green beans whenever I can I adapted the recipe a smidgen.
Almost Traditional Green Bean Casserole
Ingredients:
1 bag fresh green beans
Chicken stock
Mushrooms, cleaned and diced
2 Tbsp unsalted butter
1 can Cream of Mushroom soup
1/4 c 2% milk
French Fried Onions
Salt and Pepper, to taste
Instructions:
Preheat oven to 350 degrees.
Bring chicken stock to a boil. Add green beans and cook for 10 minutes. Drain and immediately put beans into a bowl with cold water and ice to stop the cooking process.
Melt butter, then sauté mushrooms for 5-7 minutes. Combine beans, mushrooms and soup into a casserole dish. Add milk and mix everything together. Season with salt and pepper. Add half of the onions and mix together. Bake for 30 minutes. Take out and place remaining onions on top then bake for additional 5-7 minutes.
