Our house is on a s’mores kick right now. The kids love making them – I think it’s because they love to see them catch fire. Whatever it is we are hooked.
Sydni and I were lounging around one day and started talking about making s’mores cupcakes and the different ways we could make them. So next thing I know we are making them. I love anything that has chocolate, marshmallows or Graham crackers so these were definitely a hit in my book. Maybe a little Nutella could have helped but the cupcake itself was perfect just the way it was. It turned out moist and that may have been due to the mini chocolate chips I added.
I can’t wait to get to Walt Disney World and have some s’mores there!
S’mores Cupcakes (chocolate cupcake recipe adapted from Food.com)
Ingredients:
For cupcakes:
1 1/2 cups flour
1 cup granulated sugar
1 teaspoon baking soda
1/2 teaspoon kosher salt
1/3 cup cocoa powder
1/2 cup oil
1 cup water
1 tsp vanilla extract
1 tablespoon vinegar
For s’more-ifying cupcakes:
Mini chocolate chips
Mini marshmallows
Graham crackers
Melted butter
Chocolate icing
Instructions:
Preheat oven to 350 degrees.
Whisk all ingredients together until thoroughly combined.
Line cupcake pan with liners. Depending on your preference, either place broken Graham crackers on bottom of each liner or make a crust out of combining Graham crackers and melted butter and molding to bottom of liner. If using the crust and butter mixture, bake the crusts for 5 minutes in the oven.
Drop cupcake mix into prepared tins filling 3/4 of the way full. Add either mini chocolate chips or mini marshmallows to the tins. Push in to the mixture.
Note: I did several variations and they all were good – the marshmallows melt to almost nothing so you might want to leave that for the end or make a marshmallow type icing.
1) add mini chocolate chips to Graham cracker crust before filling with cupcake mix. Add mini marshmallows 5 minutes before cupcakes are done
2) add mini chocolate chips to cupcakes that have a Graham cracker on the bottom of the liner halfway through baking time
3) add mini chocolate chips or mini marshmallows to batter before you bake
4) add small chunks of Graham cracker to batter
Bake for 20 minutes. Frost with icing and decorate with Graham crackers, chocolate and marshmallows.
